Cauliflower Fried Rice
Surprise! I'm eating cauliflower and kale again. Here is a simple recipe to help you eat your veggies.
1 lb wild caught shrimp
4 cups riced cauliflower
2 cups chopped kale
3 tbs sesame oil
4 garlic cloves
2 tbs Coconut Aminos
Pepper to taste
Heat 2 tbs sesame oil in a large skillet then add 4 cloves of diced garlic until it starts to brown.
Add 4 cups riced cauliflower and heat about 3-4 minutes, then add 2 cups chopped kale and cook an additional 2 minutes.
Move the veggies to the side, add a little more oil if needed, then add in two whisked eggs. Stir it around to create scrambled eggs, then mix with the cauliflower and kale.
Season with black pepper and two tablespoons Coconut Aminos and cook to desired consistency.
Set aside, then heat 1 tbs sesame oil to cook the shrimp, about five minutes depending on the size. Mix everything together and enjoy!
