Easy Roasted Vegetables

This is so easy, I don't even know if I can call it a recipe!  Several of my friends have gardens with huge zucchinis and tomatoes and I am thankful for the fresh vegetables.  Today was cold and rainy, so I decided to roast them.



Heat oven to 350

Chop zucchini and slice tomatoes

Mix with 1 tablespoon coconut oil

Sprinkle with Italian seasoning and Salt to taste

Bake for 20-30 minutes depending on how soft you like your vegetables.

You can even sprinkle with a little Parmesan or Mozzarella cheese.

I like to make big batches of veggies that I can use several different ways:   

  • Serve it as a side dish with chicken or fish.  
  • Make a bowl with quinoa or another healthy grain.  
  • Add it to eggs and bake as a frittata.
