Watermelon Mint Salad

I love fruit in salads.  And with the mint, this is the perfect summertime salad.  It's inspired by a dish I had at Bethany Public House.  They also used Feta cheese, so if you want to add a tablespoon or so of cheese, just reduce the olive oil in the dressing to keep the macros about the same.  This salad is full of nutrients and fat to keep you full for hours.  



2 cups spinach

1/2 cup cucumber

1/2 cup watermelon

5 ounces cooked shrimp (or chicken)


2 TBS olive oil

1 TBS chopped mint

1 TBS chopped basil

Pepper to taste
