Creamy Chicken Tomato Soup

Fall means lots of Crockpot meals and bulk sausage was on sale so I modified a few recipes to create this one.

Ingredients

1 lb chicken breast

1 lb sweet Italian Pork sausage

4 cups chicken broth

2 14 oz cans diced tomatoes

1 cup full fat coconut milk

4 cups kale

salt amd pepper to taste

 

Brown the sausage in a skillet.  I also steamed the kale to cook it down because my crockpot was getting full.

In the crockpot, combine the chicken, chicken broth, tomatoes, and coconut milk.

Cook on high for four hours.  Add the kale and sausage about 30 minutes before it is done.
